Prep time: 30 minutes
6 large carrots
2 tbsp. garlic infused oil
1 ½ tsp. paprika
½ tsp. cinnamon
- Preheat the oven to 180ºC fan. Peel and chop the carrots into finger-length batons and place on a baking tray.
- In a separate bowl, combine the garlic oil, salt, paprika and cinnamon. Drizzle the batons and ensure that each one is equally covered with the spiced oil.
- Bake for 25 minutes, or until soft and golden.

Yum. Garlic infused oil has become my best cooking friend since going low fodmap!
It’s the best way to get the same garlic taste without the IBS-related fallout! I find that it also works well in salads, especially combined with balsamic vinegar 🙂
